Évora is a UNESCO-listed museum of a working city: a 1st-century Roman temple in the main square, a medieval aqueduct with houses built into its arches, the chapel of bones, and whitewashed lanes painted with yellow ochre borders. Around it run the Alentejo’s flagship wine routes — Cartuxa, Esporão and two dozen more.
